摘要

地方特色餐饮业作为区域经济的重要组成部分,承载着传承地域文化和满足消费者多样化需求的重要使命。随着消费者需求的不断升级和市场竞争的加剧,地方特色餐饮业亟需转型升级以适应新的市场形势。通过转型升级,可以提高餐饮业的整体竞争力和盈利能力,推动地方经济的持续发展。在这个过程中,地方特色餐饮业必须紧密结合当地的文化、历史、自然资源等特色元素,形成具有独特魅力的餐饮产品和服务,为推动经济发展、促进就业以及满足人民生活需求方面发挥地方特色餐饮企业的重要作用。沙县小吃凭借多年的发展,已经从一个小小的地方特色,逐渐演变成了知名的美食品牌。然而随着餐饮行业的市场竞争日益激烈,沙县小吃面临着转型升级的发展需求,并且在转型升级过程中面临着诸多困难。因此,本文以沙县小吃为核心案例,深入探讨了中国地方特色餐饮业的转型升级问题,旨在提出有效的策略来应对当前市场环境中的挑战。本研究采用了多种研究方法,包括文献分析法、案例研究法、归纳总结法,以及定性与定量相结合的研究方法。在研究的早期阶段,本文深入探讨了产业转型升级的概念定义、实现路径、影响因素和战略,并通过对大量文献的阅读和分析,明确了研究的主要焦点和目标。为了更全面地理解餐饮业的现状,本文从多个角度进行了分析,包括市场规模、政府监管、消费者需求以及公司策略等,并揭示了地方特色餐饮业面临的主要痛点。另外,沙县小吃作为地方特色餐饮业的典型代表,本文对其进行了详细的研究。不仅详细地分析了沙县小吃的历史背景,还深入研究了它的市场定位、自身优势以及发展机会和挑战,最后根据沙县小吃的痛点问题提出了具有指导意义的转型升级策略。在总结研究成果时,本文根据沙县小吃面临的问题和对应的解决策略,提出了一系列地方特色餐饮业应遵循的发展建议,并得出了研究结论。本文的研究成果为地方特色餐饮业如沙县小吃在面对行业挑战时提供了重要参考,并为相关的政策制定者、研究者和实践者提供了有益的启示。通过总结沙县小吃的经验和教训,以及提出的具有针对性的建议,本研究有助于推动中国餐饮文化的发展,也为地方特色餐饮业的转型与升级贡献了新的思考和路径。

As an important part of the regional economy, the local speciality catering industry carries the important mission of inheriting the regional culture and meeting the diversified needs of consumers. With the continuous upgrading of consumer demand and the intensification of market competition, the local speciality catering industry is in urgent need of transformation and upgrading to adapt to the new market situation. Through transformation and upgrading, the overall competitiveness and profitability of the catering industry can be improved and the sustainable development of local economy can be promoted. In this process, the local speciality catering industry must closely combine the local culture, history, natural resources and other characteristic elements, forming a unique charm of catering products and services, to promote economic development, promote employment and meet people‘s life needs play an important role in local speciality catering enterprises. Sha County snacks with years of development, has evolved from a small local characteristics, gradually evolved into a well-known food brand. However, with the increasingly fierce market competition in the catering industry, Sha County Delicacies are facing the development needs of transformation and upgrading, and they are facing many difficulties in the process of transformation and upgrading. Therefore, this paper takes Sha County snacks as the core case, and deeply discusses the transformation and upgrading of the catering industry with Chinese local characteristics, aiming to put forward effective strategies to cope with the challenges in the current market environment.This research adopts a variety of research methods, including literature analysis, case study, induction and summarization, and a combination of qualitative and quantitative research methods. In the early stage of the research, this article deeply discusses the conceptual definition, implementation path, and influencing factors of industrial transformation and upgrading. Through reviewing and analyzing a large number of literatures, the main focus and objectives of the study are clarified. To more comprehensively understand the status quo of the catering industry, this article analyzes from multiple perspectives, including market size, government regulation, consumer demand, and corporate strategy, and reveals the main pain points faced by the local catering industry. In addition, as a typical representative of the local catering industry, Sha County snacks are studied in detail in this article. Not only the historical background of Sha County snacks is analyzed in detail, but also the market positioning, inherent advantages, and development opportunities and challenges are deeply explored. Finally, transformation and upgrading strategies with guiding significance are proposed based on the pain points of Sha County snacks. In summarizing the research results, this article puts forward a series of development suggestions for the local catering industry to follow, according to the problems faced by Sha County snacks and the corresponding solutions, and draws research conclusions. The research results of this article provide important references for local catering industries such as Sha County snacks to face industry challenges and offer valuable insights for relevant policy-makers, researchers, and practitioners. By summarizing the experience and lessons of Sha County snacks and proposing targeted suggestions, this study contributes to the promotion of Chinese catering culture and provides new thoughts and paths for the transformation and upgrading of local catering industries.
